My Favorite Recipies: Mocha Chunk Cookies

I made these cookies a couple of weeks ago to take to a friend, and decided to share the recipe with you! I didn't ever take a picture of the ones I made...seriously, I took them to a friends house and we ate them. End of story. No time for small talk pictures. They are that good!

This is a pretty standard chocolate chip cookie recipe, but with an unexpectedly easy ingredient to make them Mocha flavored. Coffee + chocolate = perfectness! :)

¼ cup Instant coffee granules
2 Tablespoons boiling water
½ cup butter or margerine, softened
¾ cup sugar
½ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups flour (I always end up adding more than this)
¼ teaspoon baking soda
Dash salt
2 cups semi-sweet chocolate chunks (or chips)


Combine coffee and water; set aside.

In a large mixing bowl, cream butter and sugars. Add egg, vanilla and coffee. Mix in flour, baking soda and salt until well blended. Stir in chocolate chunks.

Chill dough for 30 minutes.

Shape into walnut sized balls and place on greased cookie sheets. Bake at 350 for 10-12 minutes or until lightly browned (which is actually after about 7-8 minutes...leaving them slightly gooey is the key, because they will cook a little bit more after you take them out of the oven.)

Eat them all in one sitting. Enjoy!
